Honey mustard is the nectar of the gods. That sweet tangy goodness can go on about everything. I’m not ashamed to admit I used to grab multiple handfuls of honey mustard packets every time I stopped by Chick-fil-A. But then I realized why bother when you can easily make it at home with just Dijon mustard and honey. This realization was a game changer and I’ve been trying to use it on everything since.
With the popularity of Lemon Tilapia Foil Packet on Pinterest, I’ve been wanting to incorporate foil packets into another recipe. Lucky for me chicken was on sale and honey mustard seemed like the perfect companion for this experiment. I also grabbed some red potatoes to make this a complete meal. Honey Mustard Chicken Foil Packet

Ingredients
- 1 boneless chicken breast, skinless
- 3 small red potatoes, quartered
- 1 tablespoon olive oil
- 1 1/2 tablespoon Dijon mustard
- 1 1/2 tablespoon honey
- 1 sprig of rosemary
- salt and pepper, to taste
Instructions
- Preheat oven to 400
- In a small bowl mix together Dijon mustard and honey to make the sauce and set to the side.
- Lay out a large piece of aluminum foil. Place chicken on top of the foil in the center.
- Place potatoes around the chicken. Drizzle everything with oil and season with salt/pepper.
- Pour sauce over chicken and place rosemary on top.
- Wrap up the foil packet and place in oven for 30-45 minutes
- Prep Time: 10 mins
- Cook Time: 40 mins

Honey mustard can be easily made by mixing equal parts Dijon mustard and honey.
Preheat oven to 400 In a small bowl mix together Dijon mustard and honey to make the sauce and set to the side. Lay out a large piece of aluminum foil. Place chicken on top of the foil in the center.
Place potatoes around the chicken. Drizzle everything with oil and season with salt/pepper.
