Instant Pot Breakfast Quinoa

You might not know this but I am not a morning person. I wake up at the very last moment in order to get ready and leave for work. As you can imagine this does not leave much time for a decent healthy breakfast. Today I decided that needed to change. I wanted something quick and easy that was reasonably healthy. I had quinoa in the pantry and a pressure cooker on the counter. Thus, Instant Pot Breakfast Quinoa was born!

Instant Pot Breakfast Quinoa

Ingredients

Scale
  • 1 1/2 cups uncooked quinoa
  • 1 1/4 cups of water
  • 1 cup apple juice
  • 1 tablespoon honey
  • 1 cinnamon stick
  • pinch of salt

Instructions

  1. Rinse the quinoa in a fine mesh strainer and drain well.
  2. Add the quinoa, water, apple juice, honey, and cinnamon stick to the Instant Pot.
  3. Close lid making sure steam release valve is set to sealing.
  4. Set the Instant Pot to manual setting with high pressure for 1 min.
  5. Once you hear the beep indicating the time is done, turn off the pressure cooker off and wait 10 mins before releasing the remaining pressure.
  6. After opening the lid fluff the quinoa with a fork.
  7. Serve immediately topped with your favorite fruit.

Step by Step

It doesn’t get any better than pure Louisiana honey.
