Garlic is one of those staple ingredients that is a must have in your kitchen. In the past, I would mince it up fresh and use it in a recipe. But after going to a dinner party a couple weeks back, I can no longer look at garlic in the same way. That night I was introduced to the euphoric experience that is roasted garlic. It was served as an appetizer on a cutting board right next to an array of cheeses and salted meats. I knew after that night I would have to recreate that experience, and this recipe is that attempt.
Roasted garlic is very versatile and can be used in dishes such as hummus or can be eaten on its own. It doesn’t take much to transform ordinary garlic to the golden goodness that is roasted garlic. Some oil, foil, and some heat are really all you need. Plus it’s a perfect excuse to justify buying that huge bag of garlic you see every time you go to Costco! Just roast up your remaining garlic before it begins to spoil and freeze the cloves for future use.
