  • 1 tablespoon butter
  • 3 cups frozen tater tots, thawed
  • 4 eggs
  • 3/4 cup cheese, shredded
  • 2 green onions, sliced


  1. Preheat the oven to 350ºF degrees. In a 10-inch cast iron skillet, melt 1 tablespoon of the butter over medium heat. Coat entire skillet with the melted butter and remove from heat.
  2. Place the tater tots evenly across the skillet. Beat 4 eggs and pour over the tater tots. Sprinkle with cheese and place in oven for 30 mins. Top with green onions and serve immediately.
