Yellow Rice has always been my go to side dish when in a pinch. I think it goes back to as a kid my family would use the Saffron Yellow Rice packet all the time for a quick and easy side. Ever since I realized that making it from scratch was tastier and cheaper, I never went back to the packets. But I’m always pondering on new ways of preparing it. If you remember, last time I substituted the rice and made a quinoa version. This time I decided to throw some peas and carrots into the mix.
Yellow Rice with Vegetables

Yellow Rice with Vegetables
- Total Time: 35 mins
- Yield: 6 servings 1x
Ingredients
- 2 tablespoon butter
- 1 clove of garlic, minced
- 1 1/2 teaspoon ground turmeric
- 1/4 teaspoon cumin powder
- 1/8 teaspoon curry powder
- 2 cup Jasmine rice
- 1/2 cup frozen carrots
- 3 cups chicken stock
- 1 bay leaf
- 1/4 teaspoon salt
- 1 cup frozen peas, thawed
Instructions
- In a medium pot, melt butter over medium heat.
- Add garlic, turmeric, cumin, and curry. Stir for 30 secs.
- Pour rice into pot. Stir for 1 min.
- Pour in carrots. Stir for 1 min.
- Add chicken stock, bay leaf, and salt. Cover and bring to a boil.
- Lower heat to a simmer for approximately 20 mins. Remove from heat and let it sit for 10 mins covered. Fluff rice with a fork while adding thawed peas. Serve immediately.

Made this for family dinner. Omitted the curry powder and bay leaf since I did not have it on hand during quarantine. Still absolutely delicious! My entire family ate this without complaining.
