Yellow Rice with Vegetables

Yellow Rice has always been my go to side dish when in a pinch. I think it goes back to as a kid my family would use the Saffron Yellow Rice packet all the time for a quick and easy side. Ever since I realized that making it from scratch was tastier and cheaper, I never went back to the packets. But I’m always pondering on new ways of preparing it. If you remember, last time I substituted the rice and made a quinoa version. This time I decided to throw some peas and carrots into the mix.

Ingredients

Scale
  • 2 tablespoon butter
  • 1 clove of garlic, minced
  • 1 1/2 teaspoon ground turmeric 
  • 1/4 teaspoon cumin powder
  • 1/8 teaspoon curry powder
  • 2 cup Jasmine rice
  • 1/2 cup frozen carrots
  • 3 cups chicken stock
  • 1 bay leaf
  • 1/4 teaspoon salt
  • 1 cup frozen peas, thawed

Instructions

  1. In a medium pot, melt butter over medium heat.
  2. Add garlic, turmeric, cumin, and curry. Stir for 30 secs.
  3. Pour rice into pot. Stir for 1 min.
  4. Pour in carrots. Stir for 1 min.
  5. Add chicken stock, bay leaf, and salt. Cover and bring to a boil.
  6. Lower heat to a simmer for approximately 20 mins. Remove from heat and let it sit for 10 mins covered. Fluff rice with a fork while adding thawed peas. Serve immediately.

      Just any generic curry powder you find at the market will work.

    Made this for family dinner. Omitted the curry powder and bay leaf since I did not have it on hand during quarantine. Still absolutely delicious! My entire family ate this without complaining. That’s hard to do with two teenagers so thank you. I will keep this as a regular item for family dinner nights.
